Manna cream – From Castelbuono, Madonie
Manna is a substance derived from ash trees, which are very common in the Madonie mountains (near Palermo). For centuries, it has been extracted by carving the bark of these trees. The transparent resin drips from cracks in the bark and solidifies into long white stalactites. Processed with selected ingredients, the Manna is transformed into a delicate sweet cream, typical of Sicilian confectionery.
From Castelbuono on the Madonie Mountains, the brothers Martino, Fausto and Nicola continue their father’s confectionery story, which began in 1954 with a small ice-cream shop in the town square. Fiasconaro is now an acclaimed confectionery company, representing Sicilian haute patisserie throughout the world.
