Bell’assai, from Donnafugata’s winery, is a pleasant Sicilian red wine easily recognizable thanks to its scents with floral notes, and the taste typically able to recall Frappato, an emblematic Sicilian grape variety, which the producer grows near Vittoria.
The grapes are carefully selected during the harvesting phase, in order to identify only and exclusively the best and most useful grapes for the following phases. Alcoholic fermentation takes place in steel tanks, with maceration on the skins for 8-9 days. This is followed by refinement, again in steel for 4 months, and then bottling and marketing of the wine, sold with a pleasantly feminine-looking label.
Once opened and poured into a glass with a medium opening, the wine presents itself to the taster’s eyes with a beautiful bright ruby red color, while the bouquet – as we mentioned at the beginning of this description – will appear clear and sharp, fresh and fragrant, with hints of violets, roses and small red fruits. On the palate, the Bell’assai will reveal its soft and fresh taste, with an easily recognizable origin. It can be drunk immediately, or kept in the cellar for a few years, depending on one’s preferences.
Finally, as far as pairing is concerned, the Bell’assai proves to be quite versatile. In fact, it can be enjoyed with cold cuts and salami or fresh cheese, with seafood main courses (such as grilled fish) or with a nice local fish soup with tomato sauce.
