Marinated anchovy fillets – Mediterranean Sea, FAO Zone 37

These anchovy fillets come from the Mediterranean Sea, specifically from the FAO 37.1.2 area, and are caught with circular nets. The processing, carried out in Sciacca in Sicily, involves a meticulous process: fresh anchovies are frozen for at least 24 hours at -40°C, then defrosted and filleted by hand. Subsequently, they are washed and marinated in wine vinegar, water, and salt for 24 hours. Finally, they are packaged in glass jars with sunflower seed oil. The result is a preservative-free product that retains all the taste and freshness of blue fish.
