Marinated anchovies – Hand-processed in Sicily

The anchovies used for this preparation are caught in FAO zone 37, an area of the Mediterranean Sea renowned for its high-quality fish. Fresh anchovies are frozen at -40°C for at least 24 hours, ensuring maximum food safety. Once defrosted, the anchovies are carefully hand-filleted. They are then marinated in a mixture of wine vinegar, water, and salt for 24 hours, a process that enhances the natural flavor of the fish, giving it a pleasant tangy note and a soft, flavorful texture. After marination, the fillets are preserved in sunflower oil, which keeps them fresh and flavorful. The product is packaged in glass jars with a net weight of 550 grams and a drained weight of 300 grams.
