Vigna San Francesco Cabernet Sauvignon – Sicily DOC White
The Vigna San Francesco is a pure Cabernet Sauvignon, produced with grapes grown on a sandy-clayey, slightly calcareous soil, between 530 and 585 meters above sea level. The manual harvest is accompanied by careful selection of the clusters, which are then crushed in stainless steel tanks for alcoholic fermentation associated with about 20 days of contact between the must and the skins. The wine is aged for 18 months in new French oak barriques, made with woods from Allier and Tronçais. The result is a wine of intense ruby red color, with an aromatic profile that includes aromas of berries, licorice, black pepper, tobacco, cinnamon, and vanilla, which join the varietal herbal aromas of sage and mint.
