Tasca D'Almerita

Capofaro is a refined representation of Malvasia according to the historic Sicilian winery, Tasca d’Almerita. This sweet white wine is produced from grapes grown in the “Amphitheatre” vineyard, located 50 meters above sea level, on a soil of loose, sandy texture originating from the degradation of very ancient lava sediments. Thanks to its intense aromatic profile, with good acidity and a decent alcohol content, Capofaro is perfectly paired with shellfish, fried foods, and fresh cheeses.

Capofaro – Sweet White Salina IGT

Capofaro by Tasca d’Almerita is a sweet white wine produced from Malvasia grapes that grow in the Capofaro Estate, located on the island of Salina, in the archipelago of the Aeolian Islands, in Sicily. The vines, planted in 2004, are trained on a trellis with a Guyot pruning system, and the vineyards enjoy a density of 5,000 plants per hectare.

The grapes, which usually ripen in the first decade of September, slowly dehydrate while maintaining good acidity and a decent alcohol content. Instead of letting the grapes dry in the sun, Tasca d’Almerita prefers to dehydrate them in the shade, favoring the process without losing the varietal notes contained in the delicate skin. Fermentation takes place in stainless steel tanks at a temperature of 16°C, with contact with the skins lasting about 25 days. The wine is aged in steel tanks for 6 months.

Visually, Capofaro has a golden yellow color. On the nose, it offers a rich and intense aromatic bouquet. On the palate, this wine is sweet, balanced, with a complex structure and good persistence.

Tasca d’Almerita

The Tasca d’Almerita family has a long history in Sicily, guarding and passing on the land for eight generations. With respect for tradition and a look to the future, this family has guided the company through “200 years of slow-maturing history”.

In addition to the Regaleali estate, owned by the Tasca d’Almerita family since 1830, four other estates have been added over time: Capofaro in Salina, Tascante on Etna, the historic Whitaker Estate on the ancient island of Mozia, and Sallier de La Tour in Monreale. Each Estate has a distinctive personality and tells a different version of Sicily.
