Handmade in Modica
Cold-processed according to Modica tradition, it has a distinct aromatic profile: toasted and dried fruit notes, light spicy nuances, and a long, clean finish. The deliberately slightly grainy texture (typical of low-temperature processing) makes it chewy and allows the aromas to be released gradually. The minimal amount of sugar supports the cocoa without covering it, leaving a dry and precise balance on the palate. In pastry-making, it allows total control over sweetness and structure; in cooking, it amplifies the colour, aroma and intensity of preparations.
Antica Dolceria Bonajuto
Antica Dolceria Bonajuto, founded in 1880 in Modica, has been preserving the art of cold chocolate processing for six generations. The selection of raw materials follows ethical criteria (cocoa from certified supply chains) and each bar is finished by hand.
