Sul Vulcano Etna red is a well-known Donnafugata winery label. A wine that, as its name suggests, was born in the volcanic territory of Etna, qualifying itself as an interesting product from 100% Nerello Mascalese vines, and for this very reason easily recognizable at the tasting: the particular refinement in wood and the careful choice of the grapes to work within the process of making this wine allows the bottle of the red wine of the Marsala winery to preserve the typical fruity fragrance of the vine, as well as the mineral notes of the soil on which it is born.
As far as the production process of the wine is concerned, the harvest is carried out manually, with a wise selection of the best bunches. Then, we proceed to a further sorting in the cellar, on vibrating table, in order to make sure to use only the most delicious grapes. Then we proceed with fermentation in stainless steel vats, at a controlled temperature of 25 degrees. Maturation for 14 months, partly in steel vats and partly in French oak barriques, preceded by 7 months of bottle ageing, preparatory to marketing.
Once opened, the wine will present itself to the eyes of the taster with a beautiful bright ruby red color, while the bouquet will bring to mind the fruity notes, as well as a subtle and mineral aroma. The taste is harmonious and balanced, with good sapidity and very fine tannins.
Sul Vulcano Etna red Donnafugata should be served in glasses of medium opening at a temperature of about 16 – 18 degrees. It can be drunk immediately or left to rest in the cellar for a few years. The ideal accompaniment are with first courses with sauce, risottos with meat or mushroom sauces, cold cuts and salami or stewed red meat.
