Sciacca anchovy fillets – Authentic Mediterranean flavour
The anchovies, caught daily in the clear waters of FAO zone 37, arrive at the factory within a few hours to be processed by hand. Each fillet is delicately immersed in a mixture of sunflower oil and sea salt from the salt pans of Trapani, where it rests for at least 45 days. This long curing period gives the flesh a firm texture and a deep aromatic profile, with intense marine notes and a balanced aftertaste. Purse seine fishing ensures a sustainable approach that preserves the ecosystem.
