Federico II – Classic Method Millesimato
Federico II Spumante is a wine made from manually harvested Chardonnay grapes from the Milici vineyards, which boast an average age of over 30 years. This sparkling wine comes from a marly plateau, with a high clay component and strongly calcareous, which gives the wine a unique and distinctive personality.
The winemaking process begins with whole cluster pressing, which only values the first pressings. This is followed by fermentation at a controlled temperature, with the bases maturing partly in steel and partly in oak barrels. The cuvée, with the addition of the “liqueur de tirage”, is started for foaming. The bottles remain stacked for about 6/7 years to mature on the lees, an essential step that contributes to creating a sparkling wine of great complexity and refinement.
Federico II Spumante presents itself with a faint straw yellow color, enriched by green reflections. The perlage is very fine and persistent, and the nose distinguishes hints of yeast, bread, and vanilla, intertwined with notes of exotic fruit and mineral reminiscences of flint stone. In the mouth, the wine is full and structured, with a lively acidity that ends with a slight taste sensation of almond. The alcohol content is 12.5% vol.
