Vastedda del Belice PDO is produced in the Sicilian valley from which it takes its name, located in the south-west of the region. The Vastedda is a sheep stretched cheese, white color with a characteristic taste of fresh goat’s cheese, a bit sour but not spicy. The product has a high protein content thanks to the artisanal spinning operations carried out during production. The skill of the master cheesemakers is what makes this cheese so special. Fresh and slightly acidic, without rind, it is excellent for enriching salads, complementing your cheese platters or as a secret ingredient for your recipes.
The Company Cucchiara is an organic livestock dairy farm that operates in the Salemi area, in the district of Trapani. Thanks to their experience and the location of the farm, at an altitude of 500 metres, the Cucchiara brothers produce high quality cheeses, with an authentic flavour and respect for animal welfare and nature.
