Antico Pastificio Buffa: artisan Sicilian pasta from Castellammare del Golfo

Antico Pastificio Buffa is based in Castellammare del Golfo, in the Trapani area, and produces dried pasta inspired by Sicilian tradition. Its connection with Sicily begins with the raw material, using semolina made from durum wheat grown and milled on the island.

Production focuses on pasta shapes deeply rooted in local cuisine alongside more distinctive interpretations. Bronze-die extrusion and slow drying characterise the production process, helping create a rough surface that holds pestos, sauces and condiments particularly well.

Castellammare del Golfo and the tradition of Sicilian pasta

Castellammare del Golfo lies in western Sicily, in an area where seafood cuisine, agriculture and gastronomic traditions have coexisted for generations. The pasta maker maintains a strong connection with the Trapani area, highlighting one of the essential ingredients of Italian cuisine through wheat grown and milled in Sicily.

Pasta therefore becomes a meeting point between raw ingredients and local recipes. Busiate, Trapanese pesto, seafood sauces and baked dishes all belong to a culinary culture in which the shape of the pasta plays a specific role in the recipe, influencing how the sauce is captured and distributed.

Careful processing and quality ingredients

Antico Pastificio Buffa pasta is made with durum wheat semolina and water, using methods designed to preserve its structure and consistency. Bronze-die extrusion gives the pasta its characteristic rough surface, helping sauces and condiments adhere more effectively.

Slow drying completes the production process and is used for both traditional and more distinctive pasta shapes. The aim is to create pasta with a firm texture suited to Mediterranean recipes, where raw material, shape and processing all contribute to the final result.

Antico Pastificio Buffa products

The short Trapanese busiata reproduces the characteristic twisted shape of traditional Trapani pasta in a practical and versatile format. Its spirals hold pestos and sauces effectively. It is particularly suitable for Trapanese pesto, but can also be served with tomato, vegetables, seafood and other Sicilian-style condiments.

The long Trapanese busiata retains the characteristic spiral structure in a more elongated format. Its long shape works especially well with pestos and creamy sauces, distributing them along the surface of the pasta and creating a particularly distinctive presentation.

The squid ink Trapanese busiata offers a variation inspired by Sicilian seafood cuisine. Its characteristic dark colour makes it especially suitable for dishes with fish, shellfish and molluscs. It is a pasta designed for recipes with a strong Mediterranean character, combining the traditional Trapani shape with one of the most recognisable ingredients of coastal cuisine.

Sicilian anelletti are instead a pasta shape deeply connected with the island’s baked pasta tradition. Their small ring shape holds sauces and condiments well and is traditionally used in timbales. They are ideal for classic Sicilian baked pasta, prepared with ragù, peas, cheeses and other ingredients according to different family traditions across the island.

Busiate and anelletti: pasta shapes for different recipes

Busiate are particularly suited to pestos and sauces thanks to their rough surface and twisted shape. Trapanese pesto is their most traditional pairing, but these pasta shapes can also accompany seafood sauces, pistachio pesto, tomato and vegetables.

Anelletti serve a completely different purpose. Their compact shape is especially suited to baked dishes where pasta and sauce need to come together during cooking. Each pasta shape therefore reflects a different Sicilian culinary tradition, rather than offering a single format for every type of recipe.

Sicilian pasta for everyday cooking

Antico Pastificio Buffa pasta can be used for traditional recipes or more personal combinations. Tomatoes, extra virgin olive oil, capers, pistachio, seafood and vegetables are some of the ingredients that pair naturally with these pasta shapes. Sicilian cuisine offers many pairing possibilities, from simple preparations to more structured first courses.

Renda’s selection brings together four pasta shapes with clearly distinct identities, from short and long busiate to squid ink busiate and anelletti. Antico Pastificio Buffa tells the story of Sicily through pasta, wheat and tradition, with Castellammare del Golfo and the Trapani area at the heart of its production.
