Short Trapanese busiata pasta – 100% Sicilian durum wheat

Slow drying, bronze drawn

Made exclusively from Sicilian durum wheat semolina and water, this short busiata Trapanese is crafted from wheat grown and milled in Sicily. Bronze-die extrusion gives the pasta a rough, porous surface that is ideal for holding sauces, while slow drying helps preserve its qualities and ensures a pleasantly substantial texture. Its distinctive spiral shape echoes traditional *busiata trapanese*; the name comes from the “buso”—the stem around which the dough was traditionally wrapped to create this characteristic form. This short version is easy to eat with a fork and pairs well with both simple and rich sauces. The recommended cooking time is 11–12 minutes, and the package contains 500 g of pasta.
