Caper leaves in evo oil – The green essence of Pantelleria

Harvested by hand at the end of the season on the volcanic terraces of Pantelleria, the caper leaves are immediately immersed in brine and then in extra virgin olive oil, without the addition of additives or preservatives. This method preserves their bright colour, herbaceous aroma and slightly crunchy texture. Their intense flavour with slight acid notes goes perfectly with cold and hot dishes: try them chopped on risotto, whole in fish carpaccio or fried in batter for an original appetiser.
