Kazzen

Kazzen – Oro di Pantelleria is a family-run business born on the island of Pantelleria from a passion for the local area and its agricultural traditions. Capers are one of the most authentic symbols of the Kazzen identity. From buds and berries to leaves, the caper plant is celebrated through artisanal processing methods that reflect the intense Mediterranean character of the island.

Kazzen was founded in 2004 by Fabrizio, Alessandro and Massimo D’Ancona, brought together by family ties and a shared love for Pantelleria. Cultivation and processing take place directly on the island. The company owns land dedicated to caper cultivation and follows a production philosophy based on carefully selected raw ingredients, respect for local recipes and predominantly artisanal methods.

Today, the business is run directly by Alessandro together with his wife Marilena. Pantelleria and its agricultural culture remain at the heart of every product. The selection celebrates different parts of the caper plant through capers, caper berries and caper leaves, offering different textures and flavours from the same traditional Pantelleria crop.

A family story rooted in Pantelleria

The Kazzen project grew from a desire to process the fruits of the island directly and preserve as much as possible of their identity and connection with the land. The D’Ancona family built the business around a deep passion for Pantelleria. Production therefore begins not only with food processing, but with first-hand knowledge of the land and its crops.

The name itself recalls the Kazzen district, where the company is based. Territory and production come together in a single identity. The island, with its volcanic landscape, strong winds, sunshine and distinctive agricultural conditions, provides the setting in which the plants at the heart of the Kazzen range are grown.

Pantelleria capers

Caper cultivation is one of the island’s most representative agricultural activities. The Pantelleria PGI caper is the unopened flower bud of the caper plant. Harvesting requires care and takes place during the growing season before the bud opens into the plant’s characteristic flower.

After harvesting, the capers are traditionally processed and preserved with sea salt, an essential step in developing their distinctive aromatic profile. This traditional processing turns a small bud into one of the signature ingredients of Mediterranean cuisine. The result is an intense and savoury product particularly suited to dishes in which capers are intended to remain clearly recognisable.

Artisanal processing and respect for the ingredient

Kazzen bases its production choices on careful ingredient selection and respect for traditional methods. Artisanal processing remains a central part of the company’s philosophy. Knowledge of local recipes is combined with controls throughout the different stages of production, with the aim of maintaining consistent quality across the range.

Less conventional parts of the plant are also valued and transformed. The caper plant offers much more than its buds. Its fruit becomes the caper berry, while its leaves can also be processed and preserved to create an original and versatile ingredient for Mediterranean cooking.

Kazzen products selected for you

The selection includes Pantelleria capers, caper berries and caper leaves, three specialities that allow the same plant to be discovered through different forms, textures and uses. Each part of the caper plant offers a different gastronomic experience. Capers have an intense, concentrated flavour and are ideal with pasta, fish, meat, salads, sauces and traditional Sicilian dishes.

Caper berries are the fruit of the plant and are larger, with a fleshier texture. Caper leaves complete the selection with an even more unusual speciality. They can accompany fish and meat dishes, salads, bruschetta and more creative preparations, offering a different way to discover one of Pantelleria’s most distinctive agricultural products.

The flavours of Pantelleria in the kitchen

Capers and caper berries naturally belong in Mediterranean cuisine and many Sicilian recipes. Pantelleria salad is one of the clearest examples of their connection with the island. They can be paired with tomatoes, potatoes, olives, fish and vegetables, or used in sauces, dressings and starters.

Caper leaves broaden the possibilities even further, offering less familiar textures and combinations. A single plant can provide remarkably different ingredients. The Kazzen selection presents the caper not simply as a seasoning, but as a true expression of Pantelleria’s agricultural and culinary culture.

A production that tells the story of the island

Kazzen continues to grow and process its ingredients while maintaining a direct connection with Pantelleria. Every jar begins with a family story and a unique territory. Farming, harvesting and processing form part of a journey that brings the flavours of the island from the fields to the table.

Capers, caper berries and caper leaves offer three different ways to discover one of the plants most closely associated with the Pantelleria landscape. Tradition, family and territory define the Kazzen identity. It is a production that celebrates the simplicity of its ingredients while preserving an unmistakable connection with Sicily and Pantelleria.
