The caper is a shrub typical of the Mediterranean and usually grows in the cracks of the old walls. The capers are not the fruits of the shrub but are the floral buttons, or flowers not yet hatched. They must be harvested as soon as possible, as soon as they sprout, to maintain their intense flavour we highly appreciate during cooking.
The island of Pantelleria has cultivated capers since ages until getting the PGI recognition. Their intense flavour comes from the land while the salt, which preserves their condition and taste, comes from the sea.
The company La Nicchia, has been producing capers and caper products for generations using traditional methods of production and preservation refined on the island of Pantelleria.
