Pgi Pantelleria capers – An aromatic touch of Pantelleria
Under sea salt
Harvested in May-September in the early morning, when the capers are still turgid, they are selected and processed without the addition of preservatives. Their deep green colour, with purple highlights, and slightly spicy flavour are preserved by preservation in fine sea salt. In cooking they can be used whole, chopped or desalted to balance the umami and sweetness of tomatoes, olives and onions. Added raw at the end of cooking, they give off herbaceous notes reminiscent of the Mediterranean maquis.
