Hand-processed and aged for at least 45 days, these anchovies are caught in the Strait of Sicily (FAO Zone 37.1.2) and prepared according to tradition in the historic town of Sciacca. After careful selection, the fillets are immersed in high-quality olive oil and salted with sea salt, without the addition of preservatives. The result is a natural, full-bodied product rich in umami, capable of enhancing any dish with its unmistakable flavour. Thanks to artisanal processing and slow curing, these anchovies offer a compact texture and a balanced taste between saltiness and marine aroma.
