Sciacca marinated anchovies – Fresh and distinctive flavour

The anchovies used for this preparation are caught in FAO zone 37, an area of the Mediterranean Sea known for the quality of its fish. The fresh anchovies are frozen at -40°C for at least 24 hours, ensuring maximum food safety. The anchovies are then thawed and filleted by hand with great care. Once ready, they are left to marinate in a mixture of wine vinegar, water and salt for 24 hours, a process that enhances the natural flavour of the fish, giving it a pleasant acidic note and a soft, tasty texture. After marinating, the fillets are preserved in sunflower oil, which preserves their freshness and flavour. The product is packaged in glass jars with a net weight of 550 grams and a drained weight of 300 grams.

Original Giuseppe Curreri was founded in 1995 by the Curreri family, who wanted to create a state-of-the-art facility for the processing and marketing of blue fish, particularly anchovies. The company, located in Sciacca, Sicily, stands out for the high quality of its raw materials, which include fish from the Mediterranean and Cantabrian seas, as well as salt from the historic salt pans of Trapani and Marsala. Processing follows traditional fishing and preservation methods, with a particular focus on environmental impact: the company is 100% self-sufficient thanks to the installation of photovoltaic systems.
