Nubia red garlic is grown exclusively in the district of Nubia, in Paceco (Trapani), in dark, clay-rich soils. This unique variety is easily recognized by its white outer skins and deep red inner cloves. Sown between November and January, it is harvested fresh in May and left to dry naturally until June. Thanks to its high allicin content, it is particularly prized and aromatic, giving dishes an intense, pungent note far superior to other Italian varieties.
