Orange chocolate – Citrusy balance, lingering finish

Handmade in Modica

This bar is based on the ancient Bonajuto recipe: low-temperature processing that preserves the aromas and aromatic notes of the cocoa, sugar crystals deliberately left visible for the typical ‘raw’ Modica texture, and the addition of Sicilian orange peel (1%) which gives a citrus freshness without overpowering the character of the cocoa. The nose reveals notes of orange peel and orange blossom; the palate is initially dominated by cocoa, followed by a lively, citrusy mid-palate and a clean, lingering finish. Versatile: it enriches ganaches and glazes, can be grated onto shortbread and tartlets, and can be used in light cocoa sauces to accompany dried fruit or citrus fruits. Essential ingredients: cocoa mass, sugar, orange zest 1%.

Antica Dolceria Bonajuto is a historic workshop founded in 1880 in Modica and run by six generations. It preserves the ancient “cold” technique that enhances the profile of the cocoa with few ingredients, manual processing and respected times. Recognised as one of Italy’s 100 finest products (Eurispes, 2008), it combines tradition and ethical responsibility in its selection of cocoa, offering bars that are a treasure trove of Sicilian taste and culture.
