Originating from Sicily’s fertile soils, Nocellara olives are known for their distinctive flavour. They are harvested by hand between the end of May and the beginning of September, then processed into grains through a drying process that preserves their aroma and nutritional properties, including a rich concentration of vitamin E. Black olive kernels are characterised by their dark colour and slightly bitter taste, making them an excellent addition to meat, fish and vegetables, as well as bolder culinary creations.
