The minimum ageing period of three months in extra virgin olive oil and sea salt enhances its organoleptic properties, giving it an aromatic bouquet rich in nuances of iodine and vegetal notes. The Florios transformed the Favignana tuna fishery into a modern canning industry and introduced tin canning. Nino Castiglione, founder of the company that bears his name, worked as a labourer at the Florio factory in Favignana and returned there in the 1980s to manage tuna fishing and processing. Today, the heirs of the Castiglione family, a symbol of canned tuna in Italy, have revived Florio tuna, producing a product of the highest quality, made according to ancient tradition.
