This oregano originates in the volcanic territory of Pantelleria, where sun, wind, and mineral-rich soils contribute to a particularly concentrated aromatic profile. Its tiny, dull mustard-green leaves exude a pungent, balsamic aroma with subtle citrus and eucalyptus notes. On the palate, it offers a savory, aromatic, and slightly spicy flavor, without being bitter.
Harvesting is done by hand at the beginning of flowering, between May and June, when the plant expresses its full aromatic potential. After harvesting, the oregano is dried in the shade, away from direct sunlight, to preserve its fragrance, color, and natural essential oils. The shelling is also done by hand, in keeping with Pantelleria’s tradition. The result is a fragrant, intense, and authentic oregano, designed for those seeking a superior-quality Sicilian aromatic herb.
